Pirozhki (Russia)

Pirozhki are a beloved comfort food in Russian and Eastern European cuisine, known for their soft, pillowy dough and versatile fillings. The word "pirozhki" (plural of pirozhok) comes from the Russian word pir, meaning "feast" or "celebration," reflecting their importance in festive gatherings and everyday meals alike. While this recipe uses a savory meat filling, pirozhki can be filled with mashed potatoes, mushrooms, cabbage, eggs, or even sweet options like jam or cottage cheese. This flexibility means they can cater to all tastes and dietary preferences.

 

Ingredients (Serves 4)

Dough

  • 4 cups all-purpose flour

  • 1 packet (2 1/4 tsp) active dry yeast

  • 1 cup warm milk (110°F/43°C)

  • 2 tbsp sugar

  • 1 tsp salt

  • 2 large eggs

  • 1/4 cup unsalted butter, melted


Filling (Savory Meat)

  • 1 lb ground beef or pork

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp vegetable oil

  • Optional: 1/4 cup fresh dill or parsley, chopped


Egg Wash

  • 1 egg

  • 1 tbsp milk

 

Instructions

Prepare the Dough

  • In a small bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.

  • In a large mixing bowl, combine flour and salt. Make a well in the center, add the yeast mixture, eggs, and melted butter.

  • Mix and knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

  • Place the dough in an oiled bowl, cover, and let rise in a warm place for 1-2 hours, or until doubled in size.


Prepare the Filling

  • Heat vegetable oil in a skillet over medium heat. Add onions and garlic, sauté until translucent.

  • Add ground meat, salt, and pepper. Cook until browned and fully cooked, breaking up any lumps. Stir in fresh herbs if using.

  • Remove from heat and let the filling cool to room temperature.


Assemble the Pirozhki

  • Punch down the risen dough and divide it into 12-16 equal portions. Roll each piece into a ball and flatten into a 4-5 inch circle.

  • Place a spoonful of filling in the center of each circle. Fold the dough over the filling, pinching the edges tightly to seal. Shape into an oval or round.

  • Place the pirozhki seam-side down on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let rise for 20-30 minutes.


Bake

  • Preheat oven to 375°F (190°C).

  • Brush the pirozhki with the egg wash for a golden finish.

  • Bake for 20-25 minutes, or until golden brown.


Serve

  • Allow the pirozhki to cool slightly before serving. They are delicious warm or at room temperature.


Tips

  • For sweet fillings, use jam, sweetened cottage cheese, or fruit compote.

  • These can also be fried instead of baked. Heat oil in a deep pan to 350°F (175°C) and fry until golden brown.
