New York Blintzes (USA)

New York Blintzes are a variation of traditional blintzes, which are thin, crepe-like pancakes filled with sweet or savory fillings, commonly found in Jewish and Eastern European cuisine. In New York, particularly in Jewish delis and diners, blintzes are often filled with sweet cheese, such as a mixture of farmer's cheese, ricotta, or cream cheese, sometimes with a touch of sugar and vanilla for added sweetness. Whether it's for breakfast, a snack, or dinner, it doesn't matter – You'll love it!

 

Ingredients (Serves 4)

For the batter

  • 3 big eggs

  • 1/2 teaspoon salt

  • 100 g flour

  • 320 ml milk

  • 15 g butter or 1 tablespoon oil


Fruit filling

  • 500g fruit (blueberries, cherries, or peeled peaches)

  • 1 tablespoon lemon juice

  • 40g flour

  • 35g sugar

  • Serve with a bit of sour cream


 

Instructions

Blintzes

  1. Place all the ingredients in a bowl and mix well until there are no lumps.

  2. Brush a pan with some melted butter and heat it up. Once the pan is hot, pour 4-5 tablespoons of batter into the pan and swirl it around so that the bottom is evenly covered.

  3. Cook the blintz on one side only. Once the edges turn golden brown and start to pull away from the sides of the pan, place it cooked-side up on a kitchen towel.

  4. Repeat the process, cooking each blintz on one side only, and stack them on top of each other, always with the cooked side facing up.


Fruit filling

  1. Place the fruit in a pot and simmer over medium heat for five minutes.

  2. Add the lemon juice and gradually stir in the flour.

  3. Slowly add the sugar and then let the sauce simmer for ten minutes.

  4. Remove from heat and allow it to cool slightly before filling the blintzes.


Fill and finish baking the blintzes

  1. Place a heaping tablespoon of filling on the lower third of the cooked side of a blintz. Fold the bottom edge over the filling, then fold in the sides, and finally roll it up tightly to seal.

  2. Melt some butter in a large pan and fry the blintz packets on both sides until golden brown and slightly crispy.

  3. Serve the finished blintzes warm. If using a fruit filling, serve with a bit of sour cream; if using a cheese filling, serve with some fruit sauce.
